Redemption, in the form of a muffin…(with recipe)

After eating the last sugarless concoction, THIS recipe restored my faith in humanity.

Whenever Grandma talked about bran, it was usually in the form of bran flakes, and that was it.  I can honestly say I never enjoyed her “Golden Health Muffins.”  But this evening (and over the next few mornings) I did and will!  I also took the liberty of tweaking the ingredients to make them even more healthy.  I don’t think she would mind.

Golden Health Muffins

  • 1/2 cup sugar
  • 1/2 cup unsweetened applesauce (recipe uses oil)
  • 1 egg
  • 1 TBSP molasses
  • 2 cups flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1.5 cups milk
  • 2 cups bran flakes
  • 1 TBSP wheat germ with honey and sugar if desired (I couldn’t find any of this, so I omitted)
  • 1/2 cup of raisins (I used a heaping measure)
  • 1/2 cup chopped walnuts

Beat together sugar, applesauce, egg, and molasses.  In a separate bowl, sift together flour, baking powder, and salt (I hate using a sifter and just stirred them all together). Add dry mix, alternating 1/2 cup of milk (three times) into wet mix, scraping the sides and bottom of bowl until all is blended well.  Add bran cereal, mixing at low speed just until all blended.  Remove mixers, fold in wheat germ, raisins, and walnuts.  Spoon into greased tins.  Fill 2/3 full.  Bake at 400* for 25-30 minutes** Yield: 12 muffins***

**I only had to bake mine for 10-12 minutes

These muffins are great warm or room temperature.  They are a very hearty and almost meaty muffin.  My son even liked them.  I hope you enjoy them too!

Orange-Pineapple Salad

I also made my first non-molded jello salad.  FYI: when a recipe calls for a jello mold, you don’t have to have one (unless you are entering the best-molded-jello contest or something)…a bowl will do just fine.  If you want to be able to get the concoction out of the bowl, just spray the bowl with cooking spray first.


This was a great and easy recipe.  It is a little time-consuming, however.  You add jello, marshmallows and cream cheese to boiling water and then you have to refrigerate it for about 30 minutes or so, to let it begin to congeal.  I couldn’t find Dream Whip anywhere.  I vaguely remember seeing it when growing up, but not too often.  I had some lite Cool Whip in the freezer and just used that.  There is also a half-cup of mayo that this calls for.  I guess that is how it got the “salad” in the title.  However, I refuse to add mayo to anything with jello in it.  I just think it’s wrong, on so many levels.  So, I just omitted it all together.  Add some pineapple and the let stand overnight (or all day) in the fridge.

You can’t see it in the picture, but the end result is a creamy orange color with a few white pieces of not-quite-dissolved marshmallows and pockets of cream cheese.  It was very nice and refreshing.  The baby liked it too!
