Delite-ful

This wasn’t supposed to be made for another two days, but tomorrow is my husband’s “Friday,” so I figured I would make it so that he could take the leftovers to the guys.  He didn’t seem too upset about that.

 

Growing up, my mom would make this occasionally for a regular family dinner dessert.  However it was usually for when extended family came to town (we didn’t complain).

I wasn’t going to share the entire recipe, but it’s too good to not share!

4-Layer Delight

  • 1 cup flour
  • 1 stick (1/2 cup) margarine
  • 1.5 cups chopped pecans
  • 1 cup powdered sugar
  • 1-8oz pkg of cream cheese
  • 2 cups cool whip
  • 2 small boxes of instant pudding (any flavor, mom used chocolate, we use on coconut cream and one chocolate)
  • 3 cups milk

1st Layer: Mix flour, margarine, and pecans.  Spread into 13×9 pan & bake 20 minutes at 375*.  2nd Layer: Mix powdered sugar, cream cheese, and 1 cup of cool whip.  Spread onto mostly cooled 1st layer.  3rd Layer: Beat boxes of pudding and 3 cups of milk.  Spread on 2nd layer.  4th Layer: Add cool whip on top, sprinkle a few pecans on top (optional).  Chill and serve.

Oh, and the first piece is really hard to get out smoothly.  Just so you know.

Grandma’s Notes: 3/8/96- Went to School; watched Zach & Anthony in a play.  3/10/96- Our birthday girl at church was 2-yr old Robin Perry.  March 5.  May there be many more for this little girl.  It is a great responsibility to teach & train children today.  It calls for wisdom from God to do it properly.  LORD, AS MY LEADER, I TRUST YOU TO LEAD THROUGH THE TWISTS & TURNS OF LIFE.

This is a great, easy recipe that you can even have little ones help you with.

Always helping

Make sure your ingredients are thawed and/or close to room temperature though.  It’s really best to mix with your hands so you can feel when it’s thoroughly mixed.  It also takes only four ingredients:

Orange Balls (OK, so I’m sure there is a better title, but whatever)

  • 1 box of Nilla Wafers- crushed
  • 1 sm (6oz) can orange juice concentrate- thawed (I had a 12 oz can and halved it, then made juice with the rest)
  • 1 box (1lb) powdered sugar
  • 1 stick butter- room temperature
  • Optional: chopped coconut, chocolate shavings

Mix all the ingredients together and roll into small balls.  The orange balls can be rolled in powdered sugar, coconut, or chocolate shavings.   May be frozen and used later.

 

They taste REALLY good…I think you could even use limeade concentrate or Key Lime juice too.
