How about a yummy treat for a college co-ed or a care package snack for the military personnel in your life? These “Bars O’Gold” are the perfect thing just for that. Think chocolate chip cookies, sans chips and add oatmeal. Once cooled, these bars will keep for a good while, which comes in handy if you are mailing them. One minor note: it states the yield is 24 bars. NO Possible way it makes that many! I might have gotten 16, but the first one REALLY stuck. So, once you get the first one out (and eat it to make sure it tastes good) then you can package the rest to mail..or keep on the counter.

BARS O’GOLD- FOR MAILING

  • 1.5 cups packed brown sugar
  • 1 cup quick cook rolled oats
  •  3/4 cup all-purpose flour
  •  1/2 tsp salt
  •  1/4 tsp soda
  •  1/2 cup butter
  •  1 egg
  •  1 TBSP lemon juice
  •  1 tsp vanilla
  •  1/2 cup chopped nuts

Preheat oven to 350* and combine all ingredients, except nuts, in a large mixer bowl. Mix at low speed until well blended; stir in nuts. Pour into well-greased 8×8 square pan. Bake at 350* for 40-45 minutes. Cool and cut into bars.

*Note: this will not “pour” into a pan. You will have to put it into the greased pan and pat it down. Would also be good to double recipe, especially if you are going to send them in the mail!

Grandma’s Notes: 3/14/99- Went to town and got a cashier’s check to go to Texas Baptist Home for Children. Frank called. they plan to come April 2. We will have a birthday party here for April on the 3rd. 4/1/99- Frank called- April wants a strawberry pie. HELP ME ALWAYS HAVE OTHERS IN MIND WHEN I MAKE DECISIONS.

    Wondering if she was cutting 6 rows on one side and 4 on the other. That would explain her saying 24 “bars” rather than cutting what we typically are use to: a nice size square. I remember as a kid, my grandmother cut many of her one pan cookies into a bar size. Just goes to show you we’ve super-sized everything nowadays! 😉
