3-for-1 and TWO RECIPES!!!

OK, post numero tres tonight!  I am on a roll.  However, had I made this recipe first, I would not have been able to continue (most likely).  Tomorrow’s day was planned for Honey Muffins.  I, however, wanted to be able to have an easy go-to breakfast in the morning.  So, I made them tonight…along with a nice little nite-cap.

So, these muffins are delicious- moist, citrusy, and sweetened with just a little sugar and (of course) honey.  They won’t need any additional butter or cream in the morning!

Honey Muffins

  • 1/2 cup honey
  • 1/2 cup OJ
  • 1/2 cup melted margarine
  • 2 beaten eggs
  • 1 tsp vanilla
  • grated orange rind (optional)
  • 1 cup flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda

Combine wet ingredients and mix well. In 2nd bowl, mix dry ingredients.  Stir liquid mixture into dry until well blended (I used a hand mixer to do this).  Pour into greased and floured muffin cups, filling 3/4 full.  BAke at 375 for 15-20 minutes or until golden.  These muffins freeze well.  Yield 12 (according to this recipe, but I got a decent 15-17).

When you get these out of the pans, they will appear a little overdone on the outside (the part touching the pan).  Trust me, they are NOT burned!  They also will puff up a bit while baking, but tend to fall a little in the middle.  They are still great!

NOW…Here’s the good part!  I figured that since I already had the OJ out, and since hubby was making himself a drinky-drink (Capt & Coke to be exact), why not make a complementary drink to the muffins.  Thus was born the dreamcicle martini!

  • 1 oz whipped cream vodka (you could probably substitute vanilla)
  • 1.5 oz OJ

Shake with ice and pour into chilled martini glass.  Enjoy!
