Supper Spaghetti on Monday

16 Mar

Want a super easy dinner that all the family will enjoy?  This is the recipe for you.  You can alter it to suit your family’s tastes too.  I will say that if you want to feed a family of 4-6, you’ll want to double most of the ingredients and use a full box of spaghetti.  I didn’t double anything but the noodles and it really needed a little more to hold it together.  It was good, though, either way.

Supper Spaghetti

  • 3/4 cup condensed cream of mushroom soup
  • 1/2 evaporated milk
  • 1/4 cup water
  • 2 tsp grated onion
  • 1/2 tsp salt
  • dash pepper
  • 1.3 cups cooked spaghetti
  • 1 cup of peas (drained), cooked or canned
  • 2 hard-boiled eggs, sliced
  • 2 TBSP diced pimento

Mix together; heat slowly (do not boil).  Serve with a salad of lettuce or other greens (or apple and celery salad).

As you can see, we added chicken to ours.  It’s not crab meat, although it looks like it!  It was a little thick, but was very good!  We also didn’t have peas in our the majority of eaters don’t really like them.

Grandma’s Notes: 3/12/93- Snowing; raining 32* at 7:50; didn’t snow much.  Packed and got ready to go to Frank’s.  Lance and Marcus came about 3:00; got to Frank’s about 7:30; went to S.S. and church at Shady Oaks with Frank’s family.  Left there about 3:30; home at 7:45; Marcus stayed in Bedford with them.  THANK YOU LORD THAT YOU HAVE NEVER LEFT ME.
